We were all feeling a bit sluggish this morning, it’s cold outside, half term and lockdown, so what better way to lift the spirits than by making some poo emoji cupcakes! Lottie loves baking but I wasn’t born with any baking skills so if I can make them (and they tasted half decent) then anyone can!
Ingredients
For the cakes (makes 6 muffin sized cakes);
- 110g softened butter
- 110g golden caster sugar
- 2 large eggs
- ½ tsp vanilla extract
- 110g self-raising flour
For the chocolate buttercream;
- 200g unsalted butter, softened to room temperature
- 400g icing sugar
- 45g cocoa powder
- 3 tablespoons milk
- 2 teaspoons pure vanilla extract
Method
- STEP 1: Heat oven to 180C/160C fan/gas 4 and fill a muffin tray with cases.
- STEP 2: Mix 110g softened butter and 110g golden caster sugar together until pale and fluffy then whisk in 2 large eggs.
- STEP 3: Add ½ tsp vanilla extract, 110g self-raising flour, whisk until just combined then spoon the mixture into the muffin cases.
- STEP 4: Bake for 15 mins until golden brown and a skewer inserted into the middle of each cake comes out clean. Leave to cool completely on a wire rack.
- STEP 5: Now for the buttercream… with a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter on medium speed until creamy (about 2 mins). Add the other ingredients, beat on low speed for 30 seconds, then increase to high speed and beat for 1 minute.
- STEP 6: We piped the buttercream onto the cakes but you can just pile it on with a spoon! Then have fun decorating them! (We bought the eyes from Co-op a while ago, they are currently out of stock).
